Miles today: 0, rest day

Coldest day of fall this year in south Florida. Temperatures are in the 50's, the uggs are out, and red wine seems so much more appropriate. I actually judge the degree of coldness by what shirt I wear running. (I have my long sleeve dry fit shirt out for tomorrow's 5:45am) I HATE being too hot running and if it is cold enough to wear actual sleeves, that really means something. Probably it means that I am a big Florida baby and can't handle cold weather, but whatevs.

I would have loved to make chili tonight, but after getting home at 7pm, clearly that is not happening. Instead I made sweet potato quinoa burgers. Secret tip: quinoa, a couple spices, breadcrumbs, egg, and either any bean, potato, or lentil can be put together to make a phenom dinner. The dinner I made tonight was inspired by my fave food blog.

Yea, we eat on plastic chinaware, so?
  • 1/2 cup cooked quinoa
  • One sweet potato cooked
  • 1/4 cup panko breadcrumbs (plus extra for coating
  • 1/4 cup romano cheese
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 tbs chopped fresh thyme
  • 1 tbs dried basil
  • 1 large clove garlic chopped
  • 1 large egg, lightly beaten
  • 3 cups arugula
  • crasins
  • lemon juice
  • extra virgin olive oil
1. Mash potato and mix with quinoa, panko, cheese, salt, pepper, herbs, and egg.
2. Form into patties and coat with panko
3. Coat pan or griddle with cooking spray and cook patties for approximately 5-8 minutes per side.
4. Mix arugula and craisins with tablespoon of olive oil and teaspoon of lemon juice.
5. Divide arugula mixture between 2 plates and serve cooked patties on top. Drizzle balsamic glaze and serve immediately. (There may be extra patties)

It's easy, quick, and even the meat-eaters in the house were happy.
