Cooking Experimentation



Miles today: 0....knee is feeling better, really want to try to run, but am exhibiting self control. For now.

It is amazing how much free time there is if you don't run or work out before or after work. (Or both) Yesterday I got home from work a little early and then proceeded to go insane in the kitchen. We are talking snacks, Christmas treats for friends/neighbors, and writing a new recipe. It looked like someone had blown up Christmas dinner. I can cook fairly well (or so I tell myself), but damn, I am a mess. I didn't take a picture because the state of my house is one big, messy embarrassment at this point. Help.


Instead, here is a picture of the wreath my mother-in-law MADE. She needs to go into business. She makes works of art, I make messes. At least one of us is productive. 

Thank you Pinterest for having ridiculously easy cookie recipes for non-baking people like myself. I even tweaked this recipe to create these bites of heaven. 


Too bad our entire kitchen and my outfit were colored red by the time the cookies were finished. They are delish though, and healthier than the original recipe. Here is what I did:

  • Preheat oven to 350 degrees
  • Ingredients:
    • 2 tablespoons room temp water
    • 3/8 cup plain fat free greek yogurt
    • 2 large eggs
    • 3/4 bag of white chocolate chips
    • 1 box red velvet cake
  • Mix everything together in a large mixing bowl. The batter is super sticky. 
  • Place one tablespoon amounts on greased cookie sheet and cook for approximately 11 minutes.
  • Try not to eat them all

While I am stuck not running I may just start a project of cooking all my "Must Try" pinterest pins. 

Hahaha. Or I will just open another bottle of wine.
