Pre- Ragnar Eating

So I lied. I did want to run just one more time before Friday's relay. Just to test out how well the cortisone is really working. Nothing fast or hard. Just a happy little run to the beach and back. I hate going into anything without full intentions of pushing myself as hard as I can, but I am looking at the weekend for what it is - an amazing experience with great friends and having a blast running through one of my favorite parts of the country.

Last year, I had a girls' night the Thursday before Ragnar started. Bottomless wine = a rough day running. This year I have smartened up and not going to do that. Instead, I am eating healthy and laying off the booze until I arrive in Key West. 

Until then here is a recipe for one of my favorite salads:

Super Charged Salad

2-3 cups shredded Romaine lettuce
2 tbs chia seeds
1/4 cup cooked red quinoa
2 tbs craisins
2 tbs sliced raw almonds
Juice of 1/2 lemon
1-2 tbs goat cheese
1/2 tsp extra virgin olive oil
Drizzle of balsamic vinegar glaze




Mix everything together in a large bowl and get ready to feel healthy. 


Now excuse me while I go slip into something orange and blue. It is just about Gator game time and we are bringing home the sugar!! GO GATORS!!!!
