1. Happy National Wear Red Day! In support of the American Cancer Association, I am sporting my red dress (with tights and boots because it is FREEZING today - and by freezing I mean 40's....what can I say, I'm a wuss) In Naples there is a Red Dress Dash event to raise money for the ACA. Should be a blast - pics to come! 



2. Lime and Salt Popcorn. Why have I not had this flavor before? I am almost mad that it hasn't been in my life sooner. There is already fighting over the last bag.



3. The Red Curry Tofu I made last night. SO. GOOD. Maybe one of my best dinners...of 2013. Larry faved and didn't even complain about eating tofu. Success!!!See below for recipe.




Ok, my food photography is poor at best. I get it, and I apologize. They will get better...someday.


4. I just killed an embarrassing amount of time checking out this blog, about celebrity kids. Too funny.  

5. This sangria recipe. It is red, which matches my outfit, so automatically a great start. I love orange flavored, um, anything, and tend to swoon over good sangria. You can guess what I will be up to tonight....

Red Curry Tofu (Inspired by this Panang Curry Recipe - I love panang curry, but only had red curry)

1 tbs vegetable oil
3 cloves garlic, minced
1 tbs grated ginger
3 tbs (plus a lil extra) red curry paste
2 cans lite coconut milk
2 tbs low sodium soy sauce
1 tbs fish sauce
1 1/2 tbs lime juice
2 tbs brown sugar
1 cup white mushrooms
2 peppers, chopped
1 cup green beans
7 oz firm tofu, cubed
1/4-1/2 c chopped cashews
thai basil for garnish
Basmati brown rice


  • In a large wok or skillet, heat the oil, garlic and ginger on medium, until fragrant
  • Add the curry paste and cook for about one minute. 
  • Whisk in coconut milk, soy sauce, fish sauce, lime juice, and sugar. 
  • Add in veggies and tofu and simmer until the tofu is completely cooked. About 20-30 minutes. Taste the tofu to test.
  • Stir in cashews and serve over rice.
