Warm Breakfast on a Freezing Morning

Guess who had french fries and a vanilla milkshake for dinner last night? This girl! Guess who was up half the night with heartburn? Yep, this girl! I had such good intentions, but Larry had to go and order a Gyrene Burger and fries. (Such yummy fries, and they are delivered by a guy in fatigues on a scooter!) French fries are my weakness. The salad I was going to make looked so sucky in comparison, so I just ate his fries and washed them down with the shake instead. Dinner of champs.

Plus I totally at a kale salad earlier, so that has to balance it out, right??

Anyway, after suffering with heartburn, I decided to have a much healthier breakfast. We are just about out of, um, everything, but luckily I made an egg casserole late last week. It may need a little tweaking but not bad, and definitely filling.


Egg, Sausage, & Sweet Potato Casserole                 


8 eggs
1 medium sized, cooked sweet potato, cubed
1 1/4 cup fat free milk
3-4 veggie sausage patties, cooked and crumbled
2 heaping cups baby spinach
1 pinch nutmeg
1 tsp salt
1/2 tsp pepper
Shredded cheddar cheese for topping



  • Preheat oven to 350 degrees. 
  • In a large bowl lightly beat eggs and milk. Add in potatoes, spinach, salt, pepper, nutmeg, and sausage crumbles. (I used Publix Greenwise veggie sausage. Microwaved them and crumbled them into the mix.)
  • Pour into a greased 8 inch x 8 inch baking dish. Sprinkle thin layer of cheddar cheese over the top
  • Cover with aluminum foil and cook for 45 minutes. 
  • Uncover and cook for 10-15 minutes longer, until the eggs are set and the cheese is melted.

It was in the 30's this morning, (read: FREEZING) and we all know what babies Floridians are, so a hot breakfast was a must. This was perfect and then Larry surprised me with a hot tea from Starbucks right before I left the house. Not a bad way to start off Monday, but I am still jealous of every person in  who has today off. Happy President's Day!
