Friday Funny and a New Recipe!!

So new recipe. I was a little worried about how this one would turn out and whether Larry would run out the door and head to McDonalds. He didn't and it actually turned out very good. Not blow your mind amazing, (hey - I am being honest here) but tasty and a little variation on your normal tofu, weekday night. Oh yeah and it is quick/easy too because, well, sometimes I am lazy and want to watch Nashville reruns. 




Tandoori Tofu (original recipe here)

2 tsp paprika
1 tsp salt, divided
1/2 tsp cumin
1/2 tsp coriander
1/4 tsp turmeric
3 tbs olive oil
1 tbs minced garlic
1 tbs fresh lime juice
1 package lite tofu, drained
2/3 c fat free plain greek yogurt
chopped cilantro
2 cups brown rice/quinoa/whole wheat couscous

  • In a small bowl, mix together, paprika, 1/2 tsp salt, cumin, coriander, turmeric. 
  • In a small skillet, over medium heat, heat oil, garlic, and lime juice for about 1-2 minutes. Add spice mixture to skillet and cook for another minute or so, until fragrant. 
  • Slice tofu into about 8-9 slices about 1/2 inch thick. 
  • Take about 3 tablespoons of the spiced oil and brush it on one side of the tofu. Sprinkle with salt and place oil side down on warm grill pan or griddle.

  • Brush the other side with the oil and cook until warmed through and slightly crisp.
  • Combine yogurt with leftover oil/spice mixture. (I added extra paprika, cumin, coriander, and turmeric for extra taste)
  • Plate with a serving of tofu, yogurt, and rice. (I was pissed because we ran out of rice, but couscous filled in nicely...)

Now I am just counting down the hours until the real weekend starts. My favorite seven year old is visiting us and we (we, meaning team Will Tri For Mimosas) is relaying the Naples Fitness Challenge Triathlon. The Naples Fitness Challenge is one of my favorite triathlons. It is a reverse tri and wonderful local race. I have raced it for the past few years, but this year, I don't even feel guilty for slacking and only doing the running part. In fact, I am going to run the 5K, (PR...?) and commence mimosa drinking. Join me?
