Meatless Monday

I am spending too much time on the treadmill. I realize sometimes it is treadmill or getting struck by lightning, but after an extended period of time, I can only hope to get hit by lightning. Maybe it is because I am sick of all my music? Or because my mental toughness was faltering today. Or because I just wanted to get home to eat dinner. Anyhow, I ran short today because after work I was simply exhausted. I am going to have to make up for it tomorrow, but I just didn't have the will today. All the more reason getting up and running before work is just better for me. (Please call me and remind me I said those wise words tomorrow at 5:30 AM...)

I did manage to whip together a pretty great dinner from scratch after the gym though. Good post run dinner. Protein from greek yogurt and walnuts, high fiber and complex carbs from the whole wheat pasta.

Arugula & Walnut Pesto Pasta        


1-2 c arugula
1/2 c walnuts
1/2 c plain, fat free greek yogurt
1 tsp minced garlic
1 tsp fresh lemon juice
1/8 -1/4 c parmesan cheese
2 tbs nutritional yeast
2 tbs extra virgin olive oil
6 oz whole wheat spaghetti 
1 c frozen peas


  • In a food processor, blender, or magic bullet, combine arugula through olive oil. Add salt and pepper to taste. 
  • Cook spaghetti according to directions, reserving 1/2 cups cooking liquid. 
  • Add 1/4 pasta water to sauce and blend. 
  • Return pasta to pot and add 1/2 of the sauce and peas. Cook for 3-5 minutes until warmed through. Add more sauce or pasta water if needed and season again with salt and pepper to taste. (I ended up using about 3/4 of the sauce) 
  • Top with toasted crushed walnuts. 
  • Extra sauce will keep for a few days in the refrigerator

Tomorrow I hit the 500 mile mark for 2013!!
