Veggie Spring Rolls

I had my doubts when I woke up this morning. Larry is fighting a head cold and didn't get up at the 5:15 alarm. I ended up running partially by myself and then halfway with a friend. Worked out well, but my whole run was pretty close to marathon pace and not too hard. Does this mean I need to reconsider my goal time or slow the eff down on training runs? We will explore this further... Anyone have thoughts??




Until then here is a great recipe. Best if you grab a bottle of wine and then make with a couple of friends. Everyone loves an interactive dinner. 

This recipe was inspired by another picture I saw on Pinterest. The actual recipe didn't do much for me, so I created my own version. You can make it vegetarian, or not, just don't miss out on the miso sauce. After we finished dinner, Larry went searching for crackers, because he wanted the leftover sauce. It is that good. 




Quinoa Veggie Spring Rolls 

6-8 Spring Roll wraps 
1 cup cooked red quinoa
1/2 bell pepper, julienned
1/2 jalapeno, julienned
shredded carrots
arugula (shredded cabbage would be great here)
chopped, cooked shrimp (optional)



  • Lay out all your ingredients. Soak the wraps in warm water for 3-5 seconds and place on a plate.
  • Place spring roll ingredients on wrapper and fold both sides in. Roll like a burrito.


Miso Sauce

2 tbs white miso paste
1 tbs peanut butter
2 tbs rice wine vinegar
1 tbs soy sauce
1 tbs sweet chili sauce
1 heaping tbs ginger, freshly grated
juice of one lime
pinch of red pepper flakes

Whisk everything together and start dipping spring rolls in! enjoy!
