Asian Salmon with Lentils

On Sunday I totally forgot to actually include what my menu was for the week. (That's what happens when you booze and blog, kids - but the wine was so delish, totally worth it) Planning ahead and hitting up the grocery on Sunday makes such a huge difference. As does anticipating the nights that you have about zero patience and 10 minutes to make something halfway decent. So far I have been knocking it out of the park. (Bad news, it is only Tuesday) Here is the menu:

Sunday: Farro Mediterranean salad with pita and feta sauce
Monday: Asian salmon with Lentils
Tuesday: Shrimp spring rolls and tofu noodle bowls 
Wednesday: Creamed kale and artichoke pasta
Thursday: dinner meeting
Friday: We tango! (tango dancing before a 16 miler - awesome, yes?) 

Sunday's dinner was amazing and the leftovers are even better. Will post in the future. Mondays we have Lucy's training until 8, so I need something that is super quick and easy. The salmon and lentils don't get much easier. And it is really really good, so you can totally fool someone into thinking you slaved over dinner, when in reality you put in about 10 minutes and enjoyed a nice glass of wine. You are welcome. 


Soy Sauce Lentils ( can be made days ahead)

1 c dried lentils
2 1/2 c water
1/8 c soy sauce

Place water, soy sauce, and lentils in saucepan. Bring to boil and then turn heat to low and simmer for 25 minutes. Drain excess fluid. 


Asian Salmon: 


1/2- 1 lb sockeye salmon
1/4-1/2 c brown sugar
1/3 c soy sauce
2 tbs grated ginger
2 tbs hoisin sauce
1 clove of garlic
1 tbs fresh lime juice


  • Preheat oven to 400 degrees
  • In a bowl, whisk together sugar, soy sauce, grated ginger, hoisin sauce, garlic, and lime juice. 
  • Set aside one half of the sauce. Drizzle and coat the salmon with the other half.
  • Place in over and cook for 10-12 minutes, until desired doneness.
  • Place serving of lentils on plate, drizzle with reserved sauce and top with warm salmon and eat!
