Meatless Monday! Nectarine and Goat Cheese Salad

Meatless Mondays of the summer. If you like peaches or nectarines, you need to try this salad. You can throw shrimp or chicken or fish or whatever you want in there, but just make it. It is refreshing and easy and everything summer should be.

I made it with nectarines because I love them and I feel like there are 1000 peach recipes and no nectarine recipes. And ohmygod are those white flesh nectarines from Georgia freaking ah-mazing. I have them for breakfast, lunch, snack and now for dinner when they are in season. And if you grill them and put them with vanilla bean ice cream? Heaven on earth. But lets talk salad before ice cream.

Nectarine and Goat Cheese Salad




2 nectarines, chopped into bite sized pieces
1/4 c roasted almonds
1 package mixed greens
2-3 tbs goat cheese
2 tbs balsamic vinegar
1 tbs extra virgin olive oil
2 tsp maple syrup
2 tsp lemon juice
1/2 tsp (heaping) dijon mustard
1/4 tsp salt
1/4 tsp pepper


In a small bowl, whisk together the vinegar, oil, maples, syrup, lemon juice, dijon mustard, salt, and pepper. Taste to see if it needs any more of any one ingredient. (I like a little extra mustard to cut some of the sweetness) In a larger bowl, combine the greens, nectarines, cheese, and almonds. Toss with half the dressing. Add more as needed. Eat. 


It is basically summer in a bowl. Enjoy!
