Lentil and Brown Rice Burgers

I have been having a hell of a time with veggie patties lately. I mean they taste delicious when I make them. But they tend to totally fall apart and look like crap. I need pretty food. After experimenting around, I think I have finally gotten this right. Meat eater husband approved.

Lentil and Brown Rice Burgers

2 c cooked lentils
1- 1 1/2 c brown rice
1/2 c whole wheat panko
1/4 tsp pepper
1/2 tsp onion powder
1/2 red bell pepper, diced
2 cloves garlic, minced
3/4 -1 tsp salt
2 tbs fresh parsley chopped
1 egg + 2 egg whites, lightly beaten
1 tbs olive oil
1/2 c part skim mozzarella, shredded

In a large bowl, mix all ingredients. Slightly mash the mixture. Cover and allow to sit in fridge for 30 minutes. If the mixture is too crumbly, add another egg white. Form patties (makes about 8) and cook over medium heat on a griddle or non-stick skillet. Cook for approximately 5-7 minutes on each side, until crisp. We topped some of ours with white American cheese at the very end and ate them over a bed of lettuce, tomato, and balsamic glaze.

Obviously they are amazing on a whole wheat bun with the glaze too. Can't go wrong either way!
