What We Ate Wednesday - Mexican Pizza

You guys. I made you something. Actually I made me something, but it was so delicious that I couldn't not share the love. It's been a while since I have posted a recipe and even longer since I made some decent Mexican food, so here you go. It is easy and no lie, totally amazing. Add in a couple Coronas and it is a fiesta. (Or just two people stuffing their faces and having beers.... or maybe that is just us)

Mexican Pizza

1 can black beans, drained
1/2 tsp cumin
1/2 tsp chili powder
1/4 tsp sea salt
dash cayenne pepper
3/4 c frozen corn
1 - 1 1/2 c shredded cheese (I used cheddar)
1 jalapeno pepper
1/2 cup chopped tomatoes
1 cup chopped romaine lettuce
1/4 c chopped, fresh cilantro
juice of 1/2 lime
1 ripe avocado, thinly sliced
3 tbs mayonnaise (I use the olive oil kind)
1 tbs adobo sauce (more or less depending on how spicy you like it)
water to thin out sauce
pre-made pizza dough (one day I will make my own...)


  • Preheat over to 400 degrees.
  • In a bowl, combine black beans with cumin, chili powder, cayenne, and salt. Mash until consistency of refried beans.
  • Stretch out pizza dough and top with black bean mixture. Top with corn, 1/2 jalapeno, sliced, and cheese.
  • Cook for 15 minutes, or until done.
  • In the mean time, in a small bowl, combine cilantro, tomatoes,  lime juice, and a quarter jalapeno (or more if  you like spicy). Season with salt to taste.
  • In a separate bowl, combine mayo and adobo sauce. I thinned my sauce out with water so I could drizzle it all over the finished product.
  • Once pizza is done, remove from oven. Top with sliced avocado, tomato mixture, and lettuce. 
  • Drizzle adobo mayo on top and serve immediately.


Margaritas would work too... C'mon as if I even needed to say that.
