Meatless Monday - I said meatless, not necessarily healthy....

Holy bats. That pretty much sums up our morning run. The mosquitos have been out in force with all the rain the past few days and that means the bats are feasting in the mornings. As the sun was rising this morning, all you could hear was a squeaking like mice. You look up into the palms and there are thousand of bats fluttering around. Little weird, but good to see - anything for less mosquitos. Good thing my mom's neighborhood is a bat haven. Just another fun part of Florida summers.

Did I mention how pumped I was for back-to-back kick ass runs. Yesterday and today were great! My Gabriella belt is a lifesaver and running is actually much more comfortable now than it was a few weeks ago. 
Time out or working on improving posture???

I know this could end at any moment so I am giddy to sweat it out now. The strength and balance training is also helping. I am thinking of incorporating a little pool running into the mix. Any suggestions on all that?

So at the beginning of my pregnancy looking at basically any fruit or vegetable was enough to make me gag. If it wasn't fried, a potato, or cheese, baby said no. No negotiations. I couldn't even look at a salad. One day I decided I really wanted pimento cheese dip. Larry made fun of me but then we ended up eating nothing but pimento cheese dip for dinner...two nights in a row. I am embarrassed to even tell you how much pimento cheese dip we ate. And now I feel gross thinking about it. 

Thankfully we are past that stage and I am back to eating veggies and "normal food", whatever that is. I still really like pimento cheese dip and luckily did not OD on it back in March. Since I am back attempting to eat a little more healthily and not completely blow up, I figured I would lighten up the dip and make my own. Success. This stuff is redic. And we have exercised the minimum amount of self control not to eat the whole batch in one day. Practically a miracle. 
 Pimento Cheese Dip

1 c light cream cheese
1/2 c fat free greek yogurt
1/4 light mayonnaise
1 4 oz jar diced pimentos
2 heaping cups reduced fat cheddar cheese
2 tbs nutritional yeast
1 tbs onion powder
1/2 tsp salt
1/2 tsp pepper
sriracha to taste
If you stuff jalapeƱos with this stuff and sprinkle it with panko breadcrumbs everyone will want to be your friend. Promise.
